I've got a little problem here (SuSE Linux 9.1, utf-8 is now standard):
I choose iso-8859-1 as default encoding in (wings) preferences but wing saves 
files utf-8 encoded. 

By the way: I would use the word "Standard-Kodierung" instead of 
"Standard-Verschlüsselung" in this dialog. We use the term "Verschlüsselung"  
in konjuktion with things like ssl, ssh and pgp.
